Lazy Pasta


This is a delicious recipe that I sort of fell upon through sheer laziness couple with a love of garlic and ginger. It's ideal for those days when you can't quite work out what to make, are time-pressed but still want something packed with flavour.

Garlic Ginger and Chilli

Method

Put the water on the boil for the pasta - you can prepare this recipe in the time it takes the water to boil and cook the pasta. Boil plenty, ideally a litre of water per 100g of pasta.

While the water is heating, chop the garlic and ginger and anchovies quite finely. The anchovies won't chop too finely but it doesn't matter. If you'd like a little heat, feel free to also chop half a chili pepper, then put everything you've chopped into a bowl.

Now roughly chop the coriander and leave it on the board.

Sit down and have a drink - relax while the pasta cooks. When the pasta is ready, drain it and put it back in the saucepan, add plenty of olive oil plus the garlic, ginger, anchovy and optional chili. With the heat still on, stir it all in so the pasta gets coated in oil and the ginger, garlic et al stick to it. At the last minute throw the coriander in to, give a mix and serve.

Grind some black pepper over it and enjoy. You won't be winning any masterchef prizes but it is a wonderfully simple and warming meal, with the garlic and ginger giving it just enough kick to make it interesting and the anchovy adding some umami.
